RECIPES FROM OUR DISTRICT CLUB MEMBERS
MUSTANG CLUB:
Lucile's Cookies 1 cup shortening 1 cup white sugar 1 cup brown sugar 2 eggs 1 tsp. vanilla 2 cups flour 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 2 cups oatmeal 1 cup chopped nuts(I used cashews) 1 cup chocolate chips
Blend the shortening and sugars in mixer until smooth. Add eggs. Add vanilla. Combine the flour, baking soda, baking powder and salt in a bowl and add to the sugar mixture. Mix well. Add the rest of the ingredients and mix. Dough will be stiff. Shape cookies in your hand, whatever size you want. Put on greased cookie sheets and press flat. Bake at 375 for 12 minutes. Makes 36. Ginger Cookies ! and!/2 cups shortening 2 cups sugar 2 eggs 1/2 cup unsulphered molasses 4 cups flour 1/2 tsp. salt 4 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. cloves 4 tsp. ginger
Blend together the shortening and sugar in the mixer until smooth. Add eggs and molasses and mix well. In a separate bowl, combine the remaining ingredients and add to the molasses mixture. Mix well and refrigerate for an hour. Roll in 1 inch balls, coat with white sugar and place on ungreased baking sheets. Bake at 375 for 9 minutes. Makes 70. Sherry Puffett
Chocolate Chip Cookies 1 cup shortening 1 cup brown sugar 1 cup white sugar 2 eggs 2 tsp. baking soda, mixed with 2 tsp. vinegar 1 tsp. vanilla 3 and 1/2 cups flour 1 tsp. baking powder 1/2 tsp. salt 2 TBS water 1 (6 oz.) pkg chocolate chips 1/2 cup chopped nuts(I used pecans)
Blend shortening and sugars in the mixer until smooth. Add eggs and baking soda dissolved in vinegar, also vanilla. Sift the dry ingredients and add alternately with the water. Mix well. Add the chocolate chips and nuts. Drop by teaspoon onto greased cookie sheets. Bake at 350 for 12 - 13 minutes. Makes 45. Lucile Hallett
